Ingredients
600 g cod fillets
½ cup freshly grated Parmesan
½ cup panko breadcrumbs
2 tbsp olive oil
1 tsp garlic powder
1 tsp dried oregano or Italian herbs
Zest of ½ lemon
Salt & black pepper
Lemon wedges, for serving
Optional Add-ins
1 tbsp chopped parsley
1 tbsp Dijon mustard
Instructions
1. Preheat
Heat oven to 200°C (400°F).
Line a baking tray with parchment.
2. Prepare the Crust
In a bowl, mix Parmesan, panko, olive oil, garlic, herbs, lemon zest, salt & pepper.
3. Prepare the Fish
Pat cod dry and place on tray.
Season lightly with salt and pepper.
(Optional) Spread a thin layer of Dijon for extra flavor.
4. Crust & Bake
Press Parmesan mixture firmly onto each fillet.
Bake 15–18 minutes, until fish flakes easily and topping is golden.
5. Serve
Finish with fresh lemon juice and parsley.

Use freshly grated Parmesan—it melts and browns better.
