Ingredients

2 medium zucchini, diced

2 cups corn kernels (fresh or frozen, thawed)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup sour cream

1 cup shredded cheddar or Monterey Jack

½ cup shredded mozzarella

2 large eggs

1 tsp ground cumin

½ tsp smoked paprika

Salt & black pepper to taste

2 tbsp olive oil

Topping

½ cup crushed tortilla chips or buttered breadcrumbs

1 tbsp melted butter

Chopped parsley or coriander

Instructions

1. Preheat

Heat oven to 180°C (350°F).

Lightly grease a baking dish.

2. Saute Veggies

Heat olive oil in a pan over medium heat.

Saute onion for 3–4 minutes until soft.

Add garlic and cook 30 seconds.

Add zucchini and cook 3–4 minutes until just tender.

Stir in shredded cheeses.

4. Assemble

Combine veggies with creamy mixture.

Spread evenly in baking dish.

Mix topping ingredients and sprinkle over the top.

Bake 35–40 minutes until set and lightly golden.

Rest 5–10 minutes before serving.
