Mediterranean almond & orange blossom phyllo bites
Delicate phyllo bites filled with almond paste and lightly flavored with orange blossom water. These treats are naturally sweetened with a touch of honey or date syrup, making them a refined Mediterranean dessert — perfect for tea time or a light, healthy sweet finish. They’re crispy, aromatic, and subtly sweet without being overpowering.

Ingredients:
Filling:
1/2 cup almond meal (ground almonds)
2 tbsp honey or date syrup
1 tsp orange blossom water
1/2 tsp cinnamon
1 tsp finely grated orange zest
Phyllo Pastry:
6 sheets phyllo dough (thawed if frozen)
2 tbsp melted coconut oil or olive oil (for brushing)
Optional Garnish:
Crushed pistachios
Light dusting of powdered sugar (optional)
Instructions:
1. Prepare Filling:
In a small bowl, mix almond meal, honey/date syrup, orange blossom water, cinnamon, and orange zest until it forms a sticky paste.
2. Prepare Phyllo:
Preheat oven to 180°C (350°F).
Lay one sheet of phyllo on a clean surface, brush lightly with melted oil.
Place another sheet on top and brush again.
3. Assemble Bites:
Cut phyllo into 3–4 strips lengthwise.
Place 1 tsp of almond filling at the bottom corner of each strip.
Fold into a small triangle, continuing to fold along the strip until sealed
4. Bake:
Place bites on a parchment-lined baking sheet.
Brush tops lightly with oil.
Bake for 18–20 minutes, until golden brown and crisp.
5. Serve:
Garnish with crushed pistachios or a very light dusting of powdered sugar. Serve warm or at room temperature.
Tips & Notes:
For a slightly richer taste, add 1 tsp finely chopped dark chocolate to the filling.
Can be stored in an airtight container for 2–3 days — crispier if reheated for a few minutes in the oven.
Orange blossom water is optional but gives a very authentic Mediterranean aroma.
