Ingredients:
2 tablespoons olive oil
2 small chicken breasts, diced into small cubes
1 teaspoon dried oregano
1 teaspoon paprika
½ teaspoon garlic powder
Salt and pepper, to taste
1 small zucchini, diced
1 small red bell pepper, diced
1 small carrot, shredded
4 mini whole wheat pitas
½ cup Greek yogurt
1 teaspoon lemon juice
1 teaspoon honey (optional, for kids)
Fresh parsley or mint, finely chopped, for garnish
Optional: small handful of feta, crumbled
Instructions:
1. Prepare the chicken:
Heat olive oil in a pan over medium heat. Toss diced chicken with oregano, paprika, garlic powder, salt, and pepper. Cook for 5–7 minutes until golden and cooked through.
2. Cook the veggies:
In the same pan, add zucchini, bell pepper, and carrot. Sauté for 4–5 minutes until slightly soft but still colorful.
3. Make the yogurt sauce:
In a small bowl, mix Greek yogurt, lemon juice, and honey (if using). This adds a creamy and slightly sweet flavor kids love.
4. Assemble the pitas:
Warm the mini pitas lightly. Cut each pita in half and open the pocket. Fill with chicken, veggies, a spoonful of yogurt sauce, and sprinkle with parsley or mint. Add a little feta if desired.
5. Serve:
Arrange on a plate and serve warm. Kids can even help assemble their own, making it a fun activity.
