Ingredients

Chicken

2 chicken breasts

2 tbsp olive oil

1½ tbsp balsamic vinegar

1 garlic clove, minced

Salt & black pepper

½ tsp dried oregano

Bowl Base 

Quinoa

Brown rice

Couscous

Mixed greens

Toppings

1½ cups cherry tomatoes, halved

150–200 g fresh mozzarella (bocconcini or cubes)

Fresh basil leaves

½ avocado, sliced

Balsamic glaze

Extra virgin olive oil

Instructions

Cook the Chicken

Mix olive oil, balsamic vinegar, garlic, oregano, salt & pepper.

Marinate chicken 10–15 minutes.

Grill or pan-sear 5–6 minutes per side until golden and juicy.

Rest 5 minutes, then slice.

Build the Bowl

Add cooked grain or greens to bowl.

Top with sliced chicken.

Add tomatoes, mozzarella, basil, and avocado.

Finish

Drizzle balsamic glaze and olive oil.

Season lightly with salt & pepper.
