4 chicken breasts or thighs

2 medium zucchinis, sliced into half moons

1 cup cherry tomatoes, halved

½ cup Kalamata or green olives, pitted

3 garlic cloves, sliced

3 tbsp olive oil

Juice of 1 lemon

1 tsp dried oregano

1 tsp smoked paprika

Salt & black pepper

Fresh parsley or basil for garnish

1️⃣ Preheat & Prep

Preheat oven to 200°C

Lightly grease a baking dish with 1 tbsp olive oil

2️⃣ Prepare Chicken & Veggies

1. Place chicken in the dish

3. Drizzle with remaining olive oil and lemon juice
