Shredded Beef
800 g beef chuck roast
1 tbsp olive oil
1 tsp smoked paprika
1 tsp cumin
2 garlic cloves, minced
1 small onion, sliced
1 red bell pepper, sliced
1 cup low-sodium beef broth
Salt & black pepper
Bowl Base
2 cups cooked brown rice or quinoa
1 cup roasted zucchini or broccoli
½ cup cherry tomatoes, halved
2 tbsp fresh parsley or cilantro, chopped
Lemon-Herb Dressing
2 tbsp olive oil
Juice of 1 lemon
1 tsp Dijon mustard

👩🍳 Instructions
1️⃣ Sear Beef
Heat olive oil in a pan
Sear beef 2–3 minutes per side until browned
Transfer to crockpot
2️⃣ Add Vegetables & Broth
Add onion, bell pepper, garlic, smoked paprika, cumin, salt, pepper, and broth to crockpot
Cover and cook on low 6–7 hours or high 4 hours, until beef is tender
3️⃣ Shred Beef
Remove beef from crockpot, shred with forks
Stir back into the juices
4️⃣ Prepare Bowls
Divide rice/quinoa into bowls
Top with shredded beef, roasted zucchini/broccoli, cherry tomatoes
Drizzle lemon-herb dressing over everything
