Ingredients

Filling

2 tbsp extra-virgin olive oil

250 g mushrooms (cremini / button / mix), sliced

1 small onion or shallot, finely chopped

2 garlic cloves, minced

1 tbsp fresh thyme leaves (or 1 tsp dried)

2 tbsp flour

¾ cup milk (or unsweetened oat milk)

¼ cup vegetable broth

Salt & black pepper, to taste

Cheese

¾ cup Gruyere cheese, grated

Crust

1 sheet puff pastry (thawed)

1 egg, beaten (for egg wash)

Instructions

Prepare the Filling

Heat olive oil and butter in a pan over medium heat

Add onion/shallot and cook 3–4 minutes until soft

Add mushrooms and cook 6–8 minutes until browned and moisture evaporates

Stir in garlic and thyme; cook 30 seconds

Sprinkle flour and stir well

Slowly add milk and broth, stirring until thick and creamy

Season with salt and pepper

Remove from heat and stir in Gruyere

Assemble the Pot Pies

Preheat oven to 200°C

Divide filling among oven-safe ramekins

Cut puff pastry slightly larger than ramekins

Place pastry on top and seal edges

Brush with egg wash

Cut a small slit on top for steam

Bake

Bake 22–25 minutes until golden and bubbling

Rest 5 minutes before serving
