Ingredients (Serves 4)
For the Chicken
-
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
-
2 tablespoons olive oil
-
Salt and black pepper, to taste
-
1 teaspoon Italian seasoning
-
½ teaspoon paprika (optional, for warmth)
For the Pasta & Sauce
-
12 ounces linguine pasta
-
4 tablespoons unsalted butter
-
5 cloves garlic, minced
-
1½ cups heavy cream
-
1 cup freshly grated Parmesan cheese
-
½ teaspoon garlic powder (optional, extra flavor)
-
¼ teaspoon nutmeg (optional, classic Alfredo touch)
-
Salt and black pepper, to taste
For Garnish
-
Fresh parsley, chopped
-
Extra Parmesan cheese
Instructions
Start by bringing a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente. Reserve ½ cup of the pasta water before draining, then set the pasta aside.
While the pasta cooks, season the chicken pieces generously with salt, black pepper, Italian seasoning, and paprika if using. Heat olive oil in a large skillet over medium-high heat. Add the chicken in a single layer and cook for 5–7 minutes, stirring occasionally, until golden brown and fully cooked. Remove the chicken from the skillet and set aside.
In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 30 seconds, just until fragrant. Be careful not to brown the garlic, as it can become bitter.
Slowly pour in the heavy cream, stirring continuously. Let the sauce simmer gently for 3–4 minutes until slightly thickened. Add the Parmesan cheese gradually, stirring until fully melted and smooth. Season with garlic powder, nutmeg, salt, and black pepper to taste.
Return the cooked chicken to the skillet, stirring to coat it evenly in the Alfredo sauce. Let everything simmer together for 2–3 minutes so the flavors meld beautifully. If the sauce is too thick, add a splash of the reserved pasta water until it reaches your desired consistency.
Add the cooked linguine directly to the skillet and gently toss until the pasta is fully coated in the creamy sauce. Allow it to cook together for another minute so the pasta absorbs the flavor.
Serving
Remove from heat and garnish with fresh parsley and extra Parmesan cheese. Serve immediately while hot and creamy. Pair with garlic bread or a simple green salad for a complete, satisfying meal.
