A light and refreshing salad made with crisp vegetables, olives, chickpeas, and fresh herbs, tossed in a lemon–olive oil dressing. Naturally vegan, healthy, and perfect as a side or light main.

Ingredients

Salad

2 cups chopped romaine or mixed greens

1 cup cherry tomatoes, halved

1 cucumber, diced

½ red onion, thinly sliced

½ cup cooked chickpeas

¼ cup Kalamata olives, pitted

2 tbsp fresh parsley, chopped

1 tbsp fresh mint

Dressing

3 tbsp extra-virgin olive oil

Juice of 1 lemon

1 garlic clove, finely minced

½ tsp dried oregano

Salt & black pepper to taste

Optional Add-Ins

Roasted red peppers

Avocado slices

Toasted pine nuts or sunflower seeds

Instructions

1️⃣ Prep Vegetables

Wash and chop all vegetables

Place in a large salad bowl

2️⃣ Make Dressing

Whisk olive oil, lemon juice, garlic, oregano, salt & pepper

3️⃣ Assemble

Add chickpeas, olives, parsley, and mint

Drizzle dressing over salad

Toss gently until well combined

4️⃣ Serve

Serve immediately or chill 10 minutes for flavors to meld
