Moroccan Chickpea & Apricot Tagine 

A comforting vegan stew made with tender chickpeas, soft dried apricots, tomatoes, and aromatic Moroccan spices. Sweet–savory, fragrant, and ideal with couscous or rice.

Ingredients

Main

2 tbsp olive oil

1 onion, finely sliced

3 garlic cloves, minced

1 tsp ground cumin

1 tsp ground coriander

½ tsp cinnamon

½ tsp paprika

¼ tsp turmeric

Salt & black pepper

Stew

1½ cups cooked chickpeas (or 1 can, drained)

1 cup dried apricots, halved

1½ cups chopped tomatoes (or canned)

1 cup vegetable stock or water

Finish

1 tbsp lemon juice

Fresh cilantro or parsley

Toasted almonds

Instructions

1️⃣ Build the Flavor Base

Heat olive oil in a pot or tagine

Saute onion until soft and golden

Add garlic and spices; stir until fragrant

2️⃣ Simmer the Tagine

Add chickpeas, apricots, tomatoes, and stock

Season with salt & pepper

Cover and simmer 30–35 minutes, stirring gently

3️⃣ Finish

Stir in lemon juice

Adjust seasoning

Garnish with herbs and almonds

Tips

Soak dried apricots in warm water if very dry

For richness, add a spoon of olive oil before serving

Serve with couscous, rice, or flatbread
