🛒 Ingredients

1 kg chicken pieces (thighs & drumsticks best)

700 g potatoes, cut into wedges

5 garlic cloves, smashed

⅓ cup olive oil

Juice of 2 lemons

Zest of 1 lemon

2 tsp dried oregano

½ tsp paprika

Salt & black pepper

½ cup chicken broth or water

👩‍🍳 Instructions

1️⃣ Prepare

1. Preheat oven to 200°C

2. Add chicken, potatoes & garlic to roasting pan

2️⃣ Season

Whisk olive oil, lemon juice, zest, oregano, paprika, salt & pepper

Pour over chicken & potatoes

Toss well

3️⃣ Roast

1. Add broth

2. Cover with foil, bake 40 minutes

3. Uncover, bake 25–30 minutes until golden & crispy
