3 cloves garlic, minced

1 tsp smoked paprika (or regular paprika)

1 tsp dried rosemary or thyme

Optional toppings: grated Parmesan, fresh parsley, chili flakes

Step-by-Step Instructions

Step 1: Preheat & Prep

Preheat oven to 220°C (425°F).
Line a large sheet pan with parchment paper or lightly grease it.

Step 2: Score the Potatoes

Place a potato between two chopsticks or wooden spoons (this stops you from cutting all the way through).
Using a sharp knife, make thin cuts across the top, spacing about 3–4 mm apart. Repeat with all potatoes.

Step 3: Season

Place potatoes on the sheet pan.
Drizzle with olive oil and gently rub to get oil into the cuts.
Sprinkle garlic, salt, pepper, paprika, and rosemary evenly over the potatoes.

Step 4: Roast

Roast for 25 minutes.
Remove from oven, flip carefully, and spoon some pan oil over the tops to help them crisp.
Return to oven and roast another 15–20 minutes, until golden and crispy.

Step 5: Finish & Serve

Optional: Sprinkle Parmesan during the last 5 minutes of roasting.
