1 tbsp olive oil

Bowl Base

½ cup cooked rice, quinoa, or bulgur

Mediterranean Salad

1 cup cherry tomatoes, halved

½ cucumber, diced

¼ red onion, thinly sliced

1 tbsp olives, sliced

Tzatziki Sauce

½ cup Greek yogurt

¼ cucumber, grated and squeezed dry

1 tbsp lemon juice

1 tsp olive oil

1 small garlic clove, minced

Salt to taste

Optional Garnishes

Crumbled feta

Fresh dill or parsley

Lemon wedges

Instructions

Step 1: Make Meatballs

In a bowl, mix ground meat, onion, garlic, parsley, oregano, cumin, paprika, olive oil, salt, and pepper.

Form into small meatballs.

Step 2: Cook Meatballs

Pan method:
Heat a skillet with a little olive oil and cook meatballs 8–10 minutes, turning until browned and cooked through.

Oven method:
Bake at 200°C (400°F) for 15–18 minutes, turning halfway.

Step 3: Prepare Tzatziki

Mix Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, and salt until smooth. Chill until serving.

Step 4: Assemble Bowl

Add rice/quinoa to bowl.

Top with meatballs.

Add Mediterranean salad.

Drizzle generously with tzatziki.

Garnish with feta, herbs, and lemon.
