Instructions
Step 1: Prepare the Eggplants
Preheat oven to 200°C (400°F).
Cut eggplants in half lengthwise.
Scoop out the flesh carefully, leaving a thick shell (chop scooped flesh finely).
Brush eggplant shells with olive oil, sprinkle with salt and pepper.
Place on a baking tray and bake for 15–20 minutes until slightly tender.
Step 2: Make the Filling
Heat oil in a pan over medium heat.
