500 g baby or small new potatoes

2 tbsp olive oil

Salt & black pepper

½ tsp smoked paprika (optional)

Jalapeno_Cilantro Aioli

2 tbsp Greek yogurt or mayonnaise

1 small garlic clove, minced

1 small jalapeno, deseeded and chopped

1 tbsp fresh cilantro, chopped

Juice of ½ lime

Salt to taste

1. Cook Potatoes

Boil potatoes in salted water until tender, 12–15 minutes

Drain and let cool slightly

2. Preheat Oven

220°C (430°F), line a baking tray with parchment paper

3. Smash Potatoes

Place potatoes on tray

Smash each gently with a fork or potato masher to flatten slightly

4. Season & Roast

Drizzle with olive oil, sprinkle salt, pepper, and smoked paprika

Roast 25–30 minutes until edges are crispy and golden

5. Prepare Aioli

Blend Greek yogurt, garlic, jalapeno, cilantro, lime juice, and salt until smooth

Chill until ready to serve

6. Serve

Drizzle potatoes with aioli
