Baked Sweet Potato

1 large sweet potato, cubed

1 tsp olive oil

½ tsp paprika

Pinch salt

Roasted Asparagus

1 bunch asparagus, trimmed

1 tsp olive oil

Instructions

1️⃣ Preheat Oven

Preheat oven to 200°C (400°F)

Line a baking tray

2️⃣ Bake Sweet Potatoes

Toss sweet potato cubes with olive oil, paprika, and salt

Bake 25–30 minutes, flipping halfway

3️⃣ Roast Asparagus

Add asparagus to tray during last 12–15 minutes

Drizzle with olive oil, season lightly

4️⃣ Cook Chicken

Mix olive oil, garlic, lemon juice, oregano, thyme, salt & pepper

Marinate chicken 5–10 minutes

Grill or pan-sear 5–6 minutes per side until cooked through
