1️⃣ Prepare Chicken

2️⃣ Roast/Grill Veggies

Toss zucchini, bell peppers, and eggplant with olive oil, paprika, salt & pepper

Roast at 200°C (400°F) for 20–25 minutes or grill until tender and slightly charred

3️⃣ Prepare Sauce

Whisk Greek yogurt, olive oil, lemon juice, garlic, oregano, salt & pepper until smooth

Stir in fresh parsley if using

4️⃣ Assemble Bowl
