Instructions

1. Prep the Potatoes

Grate potatoes and squeeze out excess moisture using a clean towel.

Toss with olive oil, onion, garlic, salt, and pepper.

2. Cook the Veggies

Heat 1 tbsp olive oil in a pan.

Sauté mushrooms over medium heat 5–6 minutes until moisture evaporates.

Add spinach and cook until just wilted.

3. Mix the Pie

In a large bowl, whisk eggs.

Add potatoes, mushroom-spinach mixture, cheeses, and herbs.
