Healthy Mixed Seeds Energy Balls
These no-bake energy balls are packed with nutrient-dense seeds like pumpkin, sunflower, chia, and flax, combined with natural sweeteners and nuts for a crunchy, satisfying bite. Ingredients
½ cup rolled oats
¼ cup pumpkin seeds
¼ cup sunflower seeds
2 tbsp chia seeds
2 tbsp flaxseeds (ground or whole)
¼ cup almonds or cashews, chopped
½ cup medjool dates, pitted
2 tbsp natural nut butter (almond, peanut, or cashew)
1–2 tbsp honey or maple syrup (optional, adjust sweetness)
1 tsp vanilla extract
A pinch of salt
Optional: 1–2 tbsp cocoa powder or desiccated coconut for rollin
Instructions
1. Prepare the dates:
If dry, soak medjool dates in warm water for 10 minutes to soften, then drain.
2. Toast seeds and nuts (optional):
Lightly toast pumpkin seeds, sunflower seeds, and chopped nuts in a dry pan over low heat for 2–3 minutes for extra flavor.
3. Blend ingredients:
In a food processor, combine dates, nut butter, honey, vanilla, and salt. Blend until smooth.
4. Add dry ingredients:
Add oats, seeds, nuts, and cocoa powder (if using). Pulse until a sticky dough forms.
5. Form balls:
Using your hands, roll the mixture into 1-inch balls. If too sticky, wet your hands slightly.
6. Optional coating:
Roll balls in desiccated coconut, cocoa powder, or crushed nuts for extra texture.
7. Chill:
Place energy balls in the fridge for 30 minutes to firm up.
8. Store:
Keep in an airtight container in the fridge for up to 1 week, or freeze for up to 1 month.
Tips
You can swap or mix seeds/nuts according to your preference (e.g., walnuts, pecans, sesame seeds).
For added superfoods, sprinkle hemp seeds or goji berries into the mixture.
