Ingredients

2 cups rolled oats

1½ cups milk (dairy or almond)

2 large eggs

⅓ cup maple syrup or honey

2 tbsp olive oil

Zest of 1 large lemon

2 tbsp fresh lemon juice

1½ tsp baking powder

½ tsp vanilla extract

¼ tsp salt

1½ cups blueberries (fresh or frozen)

Optional Add-ins

¼ cup chopped almonds or walnuts

2 tbsp chia or flax seeds

Instructions

Preheat Oven
Preheat to 180°C / 350°F. Lightly grease an 8×8 inch baking dish.

Mix Wet Ingredients

Add Dry Ingredients
