Ingredients

1 sheet puff pastry or shortcrust pastry

¾ cup ricotta cheese

¼ cup grated Parmesan

1 large egg

1 clove garlic, finely grated

½ tsp salt

¼ tsp black pepper

1 tbsp olive oil

2 tbsp chopped fresh basil

Tomato Topping

2–3 ripe tomatoes (cherry or vine), sliced

1 tbsp olive oil

Pinch of salt

Pinch of dried oregano or thyme

To Finish

Fresh basil leaves

Optional: balsamic glaze drizzle

Instructions

Preheat Oven
Preheat to 190°C / 375°F. Line a tart pan or baking tray.

Prepare the Base
Roll pastry into the pan. Prick base lightly with a fork and brush with olive oil.

Mix Filling
In a bowl, combine ricotta, Parmesan, egg, garlic, salt, pepper, olive oil, and basil until smooth.

Assemble Tart
Spread filling evenly over pastry.
Arrange tomato slices on top. Brush tomatoes lightly with olive oil and sprinkle salt and oregano.

Bake
Bake 35–40 minutes until filling is set and pastry golden.
