🧾 Ingredients

Roasted Grapes & Halloumi

250 g halloumi cheese, sliced

2 cups red or black seedless grapes

1½ tbsp olive oil

½ tsp fresh thyme (or ¼ tsp dried)

Black pepper, to taste

Whipped Ricotta

1 cup ricotta cheese

1 tbsp olive oil

Zest of ½ lemon

Pinch of salt

Honey Thyme Oil

2 tbsp honey

1 tbsp olive oil

½ tsp fresh thyme leaves

Garnish

2 tbsp chopped pistachios

Fresh thyme or basil leaves

👩‍🍳 Instructions

1️⃣ Roast the Grapes

Preheat oven to 200°C / 400°F

Toss grapes with olive oil, thyme, and pepper

Roast 18–20 minutes until blistered and juicy

2️⃣ Cook the Halloumi

Heat a non-stick pan over medium

Sear halloumi slices 2–3 minutes per side until deeply golden

Set aside (do not overcrowd pan)

3️⃣ Whip the Ricotta

Blend or whisk ricotta, olive oil, lemon zest, and salt

Whip until smooth and airy

4️⃣ Honey Thyme Oil

Warm honey gently with olive oil and thyme (do not boil)

5️⃣ Assemble

Spread whipped ricotta on a plate

Arrange halloumi and roasted grapes on top

Drizzle honey thyme oil

Finish with pistachios and herbs
