1️⃣ Cook the Rice
Heat olive oil in a pot over medium heat
Sauté onion 4–5 minutes until soft
Add garlic; cook 30 seconds
Stir in rice and broth; bring to a boil
Cover, reduce heat, and cook 12–15 minutes until tender
Rest covered 5 minutes, then fluff
2️⃣ Finish Spinach–Artichoke Rice
Fold artichokes and spinach into hot rice (spinach will wilt)
Stir in parmesan, salt, pepper, and lemon zest
Cover to keep warm
