Ingredients

2 medium zucchini

4–6 eggs (depending on nest size)

½ cup grated mozzarella or mild feta

2 tbsp olive oil

1 small garlic clove, finely grated

Salt, to taste

Black pepper, to taste

1 tbsp chopped fresh parsley or chives

Instructions

1. Prepare the Zucchini

Preheat oven to 190°C (375°F).

Grate zucchini using a coarse grater.

Place in a clean kitchen towel and squeeze out excess moisture very well.

Transfer to a bowl and mix with olive oil, salt, pepper, garlic (if using), and cheese.

2. Shape the Nests

Lightly grease a muffin tin or baking tray.

Divide zucchini mixture into portions.

Press each portion into a nest shape, making a small well in the center.

3. Bake & Add Eggs

Bake zucchini nests for 10–12 minutes until slightly golden.

Remove from oven and gently crack one egg into each nest.

Return to oven and bake 10–13 minutes, until egg whites are set and yolks are soft (or longer if you prefer firm).

4. Finish & Serve

Sprinkle with fresh herbs.

Let rest for 3–5 minutes before serving.
