4 large baking potatoes
2 tbsp olive oil

1½ cups shredded mozzarella
¼ cup grated cheddar or parmesan
½ cup mushrooms, finely chopped
½ cup bell peppers, diced
¼ cup black olives, sliced
1 tsp dried oregano
½ tsp dried basil
Black pepper, to taste

Instructions
1. Bake the Potatoes
Preheat oven to 200°C (400°F).
Wash and dry potatoes; prick all over with a fork.
Rub with olive oil and sprinkle with salt.
Bake directly on oven rack or tray for 45–55 minutes, until tender inside.
2. Prepare the Filling
Cut potatoes lengthwise and gently scoop out the flesh into a bowl, leaving a thick shell.
Mash potato flesh lightly.
Mix in pizza sauce, half the mozzarella, vegetables, oregano, basil, and black pepper.
3. Stuff & Bake Again
Spoon mixture back into potato shells.
Top generously with remaining mozzarella and optional parmesan.
Return to oven and bake 12–15 minutes, until cheese is melted and bubbly.
