Ingredients

2 large chicken breasts, sliced lengthwise

2 bell peppers (red & yellow), sliced

1 small onion, sliced

3 garlic cloves, minced

2 tbsp extra-virgin olive oil

1 tsp dried oregano

½ tsp dried thyme

Zest of 1 lemon

1½ tbsp fresh lemon juice

Salt, to taste

Black pepper, to taste

Optional Garnish

Fresh parsley or basil

Crumbled feta cheese

Instructions

1️⃣ Season the Chicken
Season chicken slices with salt, black pepper, oregano, thyme, and lemon zest.

2️⃣ Sear the Chicken
Heat 1 tbsp olive oil in a large skillet over medium heat.
Cook chicken 3–4 minutes per side until golden and cooked through.
Remove and set aside.

3️⃣ Cook the Peppers
Add remaining olive oil to the pan.
Saute onion and bell peppers for 5–6 minutes until soft but still vibrant.

4️⃣ Add Garlic & Finish
Add garlic and cook 30 seconds.
Return chicken to the pan, add lemon juice, and toss everything together.
Cook 2 more minutes.

5️⃣ Serve
Garnish with herbs or feta if desired.
