Ingredients

4 chicken thighs or breasts (bone-in or boneless)

2 tablespoons olive oil

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano or thyme

½ teaspoon smoked paprika

1 tablespoon lemon juice

2 cloves garlic, minced

Fresh parsley

Instructions

1. Prep

Preheat oven to 200°C (400°F).

Pat chicken dry (key for juiciness).

2. Season

Mix olive oil, salt, pepper, garlic powder, onion powder, herbs, paprika, lemon juice, and minced garlic.

Rub all over the chicken.

3. Bake

Place chicken on a lined baking tray or dish.

Bake 35–45 minutes (boneless: ~30–35), until internal temp reaches 74°C / 165°F.
