Ingredients

Chicken Layer

600 g boneless chicken breast or thighs, sliced thin

1 tablespoon olive oil

1 teaspoon dried oregano

Salt & black pepper to taste

Sweet Potato Layer

2 large sweet potatoes, peeled and thinly sliced

1 tablespoon olive oil

½ teaspoon dried thyme or rosemary

Pinch of salt & pepper

Lemon Feta Cream

150 g feta cheese

¾ cup Greek yogurt or light cream

Zest of 1 lemon

1½ tablespoons lemon juice

1 tablespoon olive oil

Black pepper

Optional Toppings

Fresh parsley or dill

Extra feta crumble

Instructions

1️⃣ Prep the Components

Preheat oven to 190°C (375°F).

Toss chicken with olive oil, oregano, garlic powder, salt, and pepper.

Toss sweet potato slices with olive oil, herbs, salt, and pepper.

2️⃣ Make the Lemon Feta Cream

Blend or whisk feta, Greek yogurt (or cream), lemon zest, lemon juice, olive oil, and black pepper until smooth and creamy.

3️⃣ Layer the Bake

Lightly grease a baking dish.

Arrange a layer of sweet potatoes on the bottom.

Add a layer of seasoned chicken.

Spoon some lemon feta cream over the top.

Repeat layers, finishing with sauce on top.

4️⃣ Bake

Cover loosely with foil and bake 30 minutes.

Remove foil and bake 15–20 minutes more until sweet potatoes are tender and top is lightly golden.
