Garlic Shrimp with Mushrooms & Asparagus

A quick, healthy, and vibrant Mediterranean-inspired dish—tender shrimp sautéed with earthy mushrooms and crisp asparagus, finished with garlic and olive oil. Non-spicy, full of protein, and perfect for a light lunch or dinner.

Ingredients

Shrimp & Veggies

400 g large shrimp, peeled and deveined

200 g asparagus, trimmed and cut into 2-inch pieces

150 g mushrooms, sliced

3 cloves garlic, minced

2 tbsp olive oil

Juice of ½ lemon

Salt & black pepper, to taste

1 tsp dried oregano or thyme

Fresh parsley for garnish

Instructions

1️⃣ Prepare the Shrimp & Veggies

Pat shrimp dry and season lightly with salt, pepper, and optional oregano.

Trim asparagus and slice mushrooms.

2️⃣ Saute

Heat olive oil in a large skillet over medium-high heat.

Add garlic, sauté 30 seconds until fragrant.

Add mushrooms and asparagus; cook 3–4 minutes, stirring occasionally, until tender-crisp.

Push veggies to the side and add shrimp. Cook 2–3 minutes per side until pink and opaque.

Squeeze lemon juice over the top and toss everything together.

3️⃣ Serve

Plate hot, garnish with fresh parsley.

Optional: serve over quinoa, rice, or whole-grain pasta.

Tips

Don’t overcrowd the pan—cook shrimp quickly to avoid rubbery texture.

Use a mix of mushrooms (button, cremini, shiitake) for richer flavor.

Add a sprinkle of feta or shaved Parmesan for a Mediterranean twist.
