Mediterranean Taco Skillet

A one-pan Mediterranean-inspired taco skillet loaded with seasoned chicken or beef, colorful veggies, olives, and feta, topped with a creamy yogurt or avocado sauce. Quick, non-spicy, and perfect for weeknight dinners or meal prep.

Ingredients

Protein & Veggies

500 g ground chicken or turkey (or beef)

1 red bell pepper, diced

1 zucchini, diced

1 small red onion, diced

2 cloves garlic, minced

1 cup cherry tomatoes, halved

2 tbsp olive oil

1 tsp dried oregano

½ tsp ground cumin

Salt & black pepper, to taste

½ cup pitted Kalamata olives, halved

Toppings & Sauce

½ cup crumbled feta cheese

¼ cup Greek yogurt or creamy avocado sauce

Fresh parsley or cilantro, chopped

Optional: squeeze of lemon

Serve With

Warm tortillas, pita, or over rice/quinoa

Instructions

1️⃣ Cook the Protein

Heat olive oil in a large skillet over medium heat.

Add garlic and onion; sauté 1–2 minutes until fragrant.

Add ground chicken (or beef) and cook 5–7 minutes, breaking up into small pieces, until browned and cooked through.

2️⃣ Add Veggies

Stir in bell pepper, zucchini, cherry tomatoes, oregano, cumin (if using), salt, and pepper.

Cook 5–7 minutes until veggies are tender but still slightly crisp.

3️⃣ Finish & Garnish

Stir in olives.

Remove from heat, sprinkle feta, drizzle yogurt or avocado sauce, and garnish with parsley.

Serve hot with tortillas, pita, or over grains.

Tips

For extra Mediterranean flavor, add roasted red peppers or artichoke hearts.

Use low-fat Greek yogurt for a lighter version of the creamy sauce.

Make it meal-prep friendly by storing protein and veggies separately from sauce.
