Ingredients
Honey Lime Chicken
400 g chicken breast, cubed or sliced
1 tbsp olive oil
1½ tbsp honey
Zest + juice of 1 lime
½ tsp garlic powder
½ tsp dried oregano
Salt & black pepper, to taste
Brown Rice
1 cup cooked brown rice
Pinch of salt
1 tsp olive oil
Fresh Guacamole
1 ripe avocado
1 tbsp lime juice
1 tbsp olive oil
Salt to taste
1–2 tbsp finely chopped onion or parsley
Optional Garnish
Cherry tomatoes, diced
Fresh parsley or cilantro
Instructions
1️⃣ Cook the Honey Lime Chicken
In a bowl, mix olive oil, honey, lime zest & juice, garlic powder, oregano, salt, and pepper.
Toss chicken in the marinade.
Heat a non-stick pan over medium heat.
Cook chicken 4–5 minutes per side until golden, sticky, and cooked through.
2️⃣ Prepare the Rice
Warm cooked brown rice and season lightly with salt and olive oil.
3️⃣ Make the Guacamole
Mash avocado with lime juice, olive oil, salt, and optional onion or parsley until creamy but chunky.
4️⃣ Assemble the Stack
Spoon brown rice onto the plate and lightly press.
Top with honey-lime chicken.
Finish with a generous layer of guacamole.
Garnish with tomatoes and herbs if desired.
