A simple, cozy Greek-inspired skillet made with creamy white beans, juicy tomatoes, olive oil, and herbs, finished with feta and fresh herbs. Naturally plant-based, non-spicy, high in fiber, and perfect with crusty bread or pita.

Ingredients

Skillet Base

2 tbsp olive oil

1 small red onion, finely chopped

3 cloves garlic, minced

2 cups cherry tomatoes (or 1 can crushed tomatoes)

2 cans (400 g each) white beans (cannellini or navy), rinsed & drained

1 tsp dried oregano

½ tsp dried thyme

Salt & black pepper, to taste

Finish & Toppings

½ cup crumbled feta cheese

2 tbsp fresh parsley or dill, chopped

Juice of ½ lemon

Instructions

1️⃣ Build the Flavor

Heat olive oil in a wide skillet over medium heat.

Add onion and saute 3–4 minutes until soft.

Add garlic and cook 30 seconds until fragrant.

2️⃣ Simmer the Tomatoes

Add cherry tomatoes (or crushed tomatoes), oregano, thyme, salt, and pepper.

Cook 5–7 minutes until tomatoes soften and release their juices.

3️⃣ Add the Beans

Stir in white beans and simmer 5–8 minutes, gently mashing a few beans to thicken the sauce.

4️⃣ Finish

Remove from heat.

Add lemon juice, sprinkle feta and fresh herbs on top.
