Ingredients

Honey Lime Chicken

400 g chicken breast, cubed or sliced

1 tbsp olive oil

1½ tbsp honey

Zest + juice of 1 lime

½ tsp garlic powder

½ tsp dried oregano

Salt & black pepper, to taste

Rice Base

1 cup cooked brown rice or basmati

Pinch of salt

1 tsp olive oil

Fresh Toppings

1 ripe mango, diced

1 ripe avocado, diced or sliced

1 tbsp lime juice

Salt to taste

Optional Garnish

Cherry tomatoes, chopped

Fresh parsley or cilantro

Instructions

1️⃣ Cook the Honey Lime Chicken

Mix olive oil, honey, lime zest & juice, garlic powder, oregano, salt, and pepper.

Toss chicken to coat.

Heat a skillet over medium heat and cook chicken 4–5 minutes per side until golden, sticky, and cooked through.

2️⃣ Prepare the Rice

Warm cooked rice and season lightly with salt (and olive oil if using).

3️⃣ Prep Mango & Avocado

Toss mango and avocado with lime juice and a pinch of salt.

4️⃣ Assemble the Bowl

Add rice to bowls, top with honey-lime chicken.

Spoon over mango-avocado mix.

Garnish with herbs and optional veggies.
