Pizza Layer
1 cup pizza sauce or marinara
1½ cups shredded mozzarella cheese
¼ cup grated Parmesan
Toppings
½ cup mushrooms, sliced
¼ cup black olives, sliced
½ cup bell peppers
¼ cup red onion
½ cup cooked chicken, turkey pepperoni, or beef
Seasoning
1 tsp Italian seasoning
½ tsp garlic powder
Instructions
1️⃣ Prep Zucchini
Preheat oven to 180°C / 350°F.
Toss zucchini with olive oil, salt, and pepper.
Spread on a baking tray and roast 10 minutes to release moisture.
2️⃣ Assemble Casserole
Lightly grease a baking dish.
Layer roasted zucchini evenly.
Spread pizza sauce over zucchini.
