Ingredients

Salad

3 medium beets, peeled & cubed

1 tbsp olive oil

Salt & black pepper, to taste

1 ripe avocado, sliced

⅓ cup feta cheese, crumbled

2 cups arugula or mixed greens

Lemon Dressing

1½ tbsp olive oil

1 tbsp fresh lemon juice

1 tsp honey or maple syrup

Salt & black pepper, to taste

Optional Toppings

Chopped walnuts or pistachios

Fresh parsley or dill

Instructions

1️⃣ Roast the Beets

Preheat oven to 200°C / 400°F.

Toss beets with olive oil, salt, and pepper.

Roast on a baking tray 35–40 minutes, until tender.

Let cool slightly.

2️⃣ Make Dressing

Whisk olive oil, lemon juice, honey, salt, and pepper until smooth.

3️⃣ Assemble Salad

Add greens to a bowl.

Top with roasted beets, avocado slices, and feta.

Drizzle dressing over the salad.

4️⃣ Serve

Finish with nuts and fresh herbs if using. Serve immediately.
