1 cup cherry tomatoes, halved
1 cup cucumber, diced
½ cup sweet corn (boiled)
¼ cup red onion, thinly sliced

¼ cup shredded cheddar or mozzarella
¼ cup avocado slices
Fresh coriander or parsley
Creamy Dressing
½ cup Greek yogurt or sour cream
1 tbsp lemon or lime juice
1 tbsp olive oil

Cut tortillas into thin strips.

(or pan-fry lightly).

Heat a pan with a little oil.
Add chicken or beef and taco seasoning.
Cook for 6–8 minutes until fully cooked and lightly crispy.
3️⃣ Prepare the Dressing
Mix yogurt, lemon juice, olive oil, and salt until smooth.
4️⃣ Assemble the Bowl
Add lettuce to bowls.
Top with tomatoes, cucumber, corn, onion, and protein.
Sprinkle cheese and tortilla strip.
Drizzle with dressing and add avocado.
