Ingredients
Vegetables
2 large sweet potatoes, peeled and sliced thin
2 cups green cabbage, thinly sliced
2 large carrots, grated or thinly sliced
1 small onion, thinly sliced (optional)
Seasoning & Sauce
3 tablespoons olive oil
1/2 cup vegetable broth or water
1/2 teaspoon dried thyme or oregano
1/2 teaspoon paprika (optional, mild)
Salt & black pepper, to taste
Optional Toppings
1/3 cup grated mozzarella or Parmesan
2 tablespoons breadcrumbs or crushed crackers
Fresh parsley, for garnish
Instructions
1. Preheat oven:
Preheat to 190°C / 375°F. Lightly grease a casserole dish.
2. Prepare vegetables:
In a large bowl, combine sweet potatoes, cabbage, carrots, and onion.
3. Season:
Drizzle with olive oil, add thyme/oregano, paprika (if using), salt, and pepper. Toss well.
4. Assemble:
Transfer vegetables to the casserole dish and pour vegetable broth evenly over the top.
5. Bake covered:
Cover tightly with foil and bake for 30 minutes.
6. Finish baking:
Remove foil, add cheese or breadcrumbs if using, and bake uncovered for 10–15 minutes until tender and lightly golden.
7. Rest & serve:
Let rest 5 minutes. Garnish with parsley before serving.
