250 g cooked chicken breast, diced or shredded

2–3 tbsp red onion, finely chopped

Instructions

Cook 6–8 minutes until cooked through, then dice or shred.

2️⃣ Chop the vegetables

Dice cucumber, bell pepper, radishes, cherry tomatoes, and onion.

Chop greens into bite-sized pieces.

3️⃣ Make the dressing

In a small bowl, whisk together olive oil, lemon juice, mustard, salt, pepper, and herbs.

4️⃣ Assemble the salad

In a large bowl, combine chicken, vegetables, and greens.
