 Ingredients

For the Casserole

4 cups fresh spinach (or 2 cups frozen spinach, thawed and drained)

1 cup shredded mozzarella or cheddar cheese

½ cup cream cheese, softened

½ cup milk

1 small onion, finely chopped

2 cloves garlic, minced

1 tbsp olive oil

½ tsp salt

¼ tsp black pepper

For the Crunchy Topping

½ cup breadcrumbs

2 tbsp melted butter or olive oil

2 tbsp grated parmesan cheese

 Instructions

1. Preheat the Oven

Preheat oven to 190°C (375°F) and lightly grease a casserole dish

2. Cook the Aromatics

Heat olive oil in  skillet over medium heat.

Add chopped onion and cook for 2–3 minutes until soft.

Add garlic and cook for another 30 seconds.

3. Add the Spinach

Add the spinach to the skillet and cook until wilted (or warmed through if using frozen spinach).

4. Make the Creamy Mixture

Reduce heat and stir in:

cream cheese

milk

shredded cheese

salt and pepper

Mix until everything becomes creamy and well combined.

5. Assemble the Casserole

Transfer the spinach mixture into the prepared casserole dish and spread evenly.

6. Add the Crunchy Topping

In a small bowl mix breadcrumbs, melted butter, and parmesan cheese.

Sprinkle the mixture evenly over the casserole.
