Air fryer French onion potato sticks

We’re constantly searching for the next cheesy snack to air fry, and these potato sticks are a great fit. They’re the perfect party dish or sly nibble, made with mashed potatoes, cheese, and a bit French onion soup mix (which gives them a little throwback kick). If you want to taste that wonderful flavour even more, dip them into French onion sour cream.

Ingredients:

  1. 600g sebago (brushed) Potatoes peeled, coarsely chopped
  2. 100g (1 cup) coarsely grated mozzarella
  3. 70g (1/2 cup) cornflour
  4. 40g packet French onion soup mix
  5. 125g (1/2 cup) Bulla Light Sour Cream
  6. Finely chopped fresh chives or green shallots, to serve
  7. Sea salt flakes, to serve (optional)

Directions:

  1. Put 600g of peeled and coarsely chopped sebago (brushed) potatoes in a medium saucepan and add lots of cold water to cover. Set on a medium-high heat source. After covering, come to a boil. After lowering the heat to medium-low, simmer the potatoes for 15 minutes, or until they are very soft. Empty. Move to a bowl. Mash till smooth, then remove and allow it cool fully.
  2. Add 100g (1 cup) coarsely grated mozzarella, 70g (1/2 cup) cornflour and 1 tbsp of the 40g packet French onion soup mix to the potato. Use clean hands to mix until well combined. Transfer to a medium freezer-safe sealable plastic bag. Gently flatten the mixture in the bag, pressing the mixture into the edges. Seal then place in the freezer for 1 hour or until firm.
  3. Cut the bag carefully away from the potato mixture using scissors. Throw away the bag. Place the potato mixture onto a cutting board and make slices that are 2.5 cm thick. Halve every piece lengthwise.
  4. Put half of the potato sticks in the air fryer’s basket. Apply oil with a spray. Turn and spray again, repeating until all sides are well coated. Air fry at 180C for 10 minutes or until crisp and golden. Move to a platter. Repeat with remaining potato sticks.
  5. In the meantime, combine the remaining soup mix and 125g (1/2 cup) of Bulla Light Sour Cream in a small bowl. The mixture should be thick enough to dip into; if not, add one or two tablespoons of water and stir until thoroughly mixed.
  6. Arrange the sour cream mixture in the middle of a serving platter for serving. Arrange the potato sticks over the sour cream mixture. Then, if using, top with finely chopped fresh chives or green onions and sea salt flakes.
