AIR FRYER SHORTBREAD COOKIES (3 INGREDIENTS ONLY)

The ideal cookie recipe for any season are these shortbread biscuits made in an air fryer! You are leaving a lot of food on the table if you haven’t tried baking some cookies in your air fryer. These cookies are incredibly simple to make. There are just 3 ingredients needed for this tiny batch cookie recipe!

Ingredients:

  1. Six Tablespoons butter
  2. one-third cup powdered sugar
  3. one-fourth cup plus two Tablespoons all-purpose flour (gluten-free flour used 1:1 with flour is also an option)

Instructions:

  1. Beat sugar and butter together until frothy and light.
  2. Stir in flour until well combined. Don’t overmix the dough or it will be crumbly. The dough should come together into a ball using your hands.
  3. Pat dough into a log shape. If you’re not in a rush, wrap firmly in cling film and refrigerate for up to two hours or thirty minutes.
  4. When baking time comes, take the dough out of the refrigerator, unroll it, and cut it into ½-inch round discs.
    To ensure optimal heat and air circulation, line the air fryer basket with non-perforated parchment paper, leaving at least 2 inches of space around the edge.
  5. Place the cookies in the air fryer basket and bake for 8 to 10 minutes at 330°F/166°C. Allow cookies to cool down in the air fryer for approximately five minutes, then use a cookie lifter to move them to a cooling rack so they may cool down fully.
  6. After putting the cookies in the air fryer basket, bake them at 330°F/166°C for 8 to 10 minutes. After letting the cookies cool in the air fryer for about five minutes, transfer them to a cooling rack using a cookie lifter so they can finish cooling.

How To Store:

  • Allow cookies to cool fully before storing them for up to five days in an airtight container.

Notes:

  • It is best to use room temperature butter.
  • We used an air fryer that wasn’t preheated to make these cookies. If you preheat yours, adjust the timing.
  • For an even more indulgent treat, you may dip these in melted chocolate.
  • You may prepare this dough up to three days in advance and keep it chilled. It has a maximum one-month freezing period.
