Air Fryer Turkey Meatballs + Meal Prep
Ideal for those adhering to low-carb, paleo, keto, and gluten-free diets. Post has points for Weight Watchers.
Ingredients:
- 1 red bell pepper, cut finely and deseeded
- 1.5 pounds (675 grammes) turkey mince
- One big egg, lightly beaten
- four tablespoons of finely chopped fresh herbs (parsley, coriander)
- one tablespoon of finely minced fresh cilantro
- salt
- black pepper
- cooking spray
Instructions:
- Set the air fryer to 200C/400F.
- In a bowl, combine all the ingredients (excluding the frying spray).
- Form 1-1/4-inch meatballs.
- In the air fryer basket, arrange half of the meatballs in a single layer. Cook for 7 to 10 minutes, shaking halfway through, or until cooked through and lightly browned.
Repeat with the remaining meatballs after removing and keeping warm. - Serve hot with toothpicks and a sauce for dipping.
Notes Tips for Turkey Meatballs
- To ensure that they cook at the same time, try to make sure the meatballs are all about the same size.
- You can also substitute other vegetables, like grated carrots, mushrooms, etc.
- To ensure that the meatballs stay together while cooking, make them rather tiny.
- To suit your taste, you can add more spice.
