Amazing Pomegranate & Feta Salad
A refreshing, Mediterranean-style salad bursting with sweet pomegranate seeds, creamy feta, crunchy cucumbers, and peppery arugula, all tossed in a zesty lemon-mint dressing. Light, healthy, and full of flavor.
Ingredients
For the Salad
3 cups arugula
1 cup pomegranate seeds
½ cup feta cheese, crumbled
1 small cucumber, diced
½ red onion, thinly sliced
¼ cup walnuts or pecans, toasted
2–3 tbsp fresh mint, chopped
1 avocado, sliced
For the Lemon-Mint Dressing
3 tbsp extra virgin olive oil
2 tbsp lemon juice
1 tbsp honey or maple syrup
1 tsp Dijon mustard
1 tbsp fresh mint, finely chopped
Salt & black pepper to taste
Instructions
1. Make the Dressing
In a small bowl, whisk together:
Olive oil + lemon juice + honey + Dijon + mint + salt + pepper.
Set aside.
2. Assemble the Salad
In a large mixing bowl, add:
Arugula
Cucumber
Red onion
Mint
Half of the pomegranate seeds
Half of the feta
Drizzle dressing over and gently toss.
3. Serve
Top with:
Remaining pomegranate
Remaining feta
Toasted walnuts/pecans
Avocado slices
Serve immediately for maximum freshness.
