Ingredients:
* 1 lb chicken thighs (bone-in)
* 1 onion, chopped
* 1 carrot, chopped
* 1 potato, peeled and chopped
* 2 tablespoons dried mint
* 1 tablespoon grated ginger
* 1 teaspoon turmeric
* ½ cup chopped cauliflower
Directions
1. Cook the Chicken: In a large pot, add the chicken thighs and cover with water. Bring to a boil, then reduce the heat and simmer for 30-35 minutes until the chicken is cooked through. Remove the chicken from the pot and set aside.
2. Prepare the Vegetables: While the chicken is cooking, chop the onion, carrot, potato, and cauliflower. Add the chopped vegetables to the pot with the broth, and simmer for 15-20 minutes until the vegetables are tender.
3. Season the Soup: Add the dried mint, grated ginger, and turmeric to the pot. Stir well to combine and continue simmering for an additional 5 minutes.
4. Shred the Chicken: Remove the skin and bones from the chicken thighs and shred the meat into bite-sized pieces. Add the shredded chicken back into the soup.
5. Simmer: Let the soup simmer for another 10 minutes, allowing the flavors to meld together.
