Avocado & Chickpea Toast
Serves: 2 | Time: 10 minutes
Ingredients
1 ripe avocado
1 cup canned chickpeas (rinsed & drained)
1–2 tsp lemon juice (to taste)
1 tbsp olive oil
Salt & pepper, to taste
Optional spices: cumin, chili flakes, or paprika
2 slices of whole-grain or sourdough bread (toasted)
Optional toppings: sliced cherry tomatoes, radishes, sprouts, feta cheese, or a drizzle of hot honey
Instructions
Mash the Base
In a bowl, mash the chickpeas with a fork until mostly broken down (some texture is nice).
Add Avocado
Scoop in the avocado and mash it together with the chickpeas.
Season
Stir in lemon juice, olive oil, salt, pepper, and any extra spices you like.
Assemble
Spread the mixture generously over toasted bread slices.
Add your favorite toppings and enjoy immediately
