Avocado Toast Bites with Cherry Tomatoes

Crispy mini toast bites topped with creamy smashed avocado, juicy cherry tomatoes, olive oil, lemon, and herbs. Easy, healthy, and ready in under 10 minutes.

Ingredients 

Base

3 slices whole-grain or sourdough bread

OR use mini toast crackers

Avocado Topping

1 ripe avocado

1 tbsp lemon juice

½ tbsp olive oil

Salt to taste

Black pepper

½ tsp garlic powder

Toppings

1 cup cherry tomatoes, halved

1–2 tbsp fresh parsley or basil, finely chopped

Drizzle of olive oil

Optional: feta cheese crumbles

Instructions

1. Prepare the Bread

Toast bread slices lightly (optional).

Cut into small squares (4 per slice).

Or use ready-made mini toasts.

2. Make the Avocado Mix

Mash together:

Avocado

Lemon juice

Olive oil

Salt

Pepper

Garlic powder

Keep it slightly chunky.

3. Assemble

Spread the mashed avocado on each toast bite.

Add 1–2 cherry tomato halves on top.

Drizzle a little olive oil.

Sprinkle fresh parsley or basil.

Add optional feta for extra flavor.

Tips

Add a drizzle of balsamic glaze for a sweet touch.

Add boiled egg slices for more protein.

Swap tomatoes for cucumber if you want something lighter.

For crispy bites, toast the bread well before topping.
