Avocado Toast Tipped with Creamy Feta
Ingredients (Serves 2):
2 slices of sourdough or multigrain bread (toasted)
1 ripe avocado
1/2 cup creamy feta (or whipped feta
1–2 tsp lemon juice
1 tbsp olive oil
Salt & freshly ground black pepper, to taste
Optional toppings:
Chili flakes
Cherry tomatoes (halved or roasted)
Microgreens or arugula
Poached or fried egg
Everything bagel seasoning
Instructions:
Toast the bread to your preferred level of crispiness.
In a bowl, mash the avocado with lemon juice, olive oil, salt, and pepper until smooth but slightly chunky.
Spread a layer of creamy feta directly on the toasted bread.
Top with the mashed avocado — or reverse the layers if you prefer.
Add optional toppings like chili flakes, tomatoes, or a poached egg for extra flavor and flair.
Drizzle with olive oil and finish with a final crack of black pepper.
Tips:
Whipped feta: For a smoother finish, blend feta with a splash of cream or Greek yogurt.
