Ingredients

Sweet Potatoes

4 medium sweet potatoes

1 tbsp olive oil

Salt and pepper

Turkey Chili

1 lb ground turkey

1 tbsp olive oil

1 small onion, diced

2 garlic cloves, minced

1 cup canned diced tomatoes

1 cup kidney beans (or black beans)

1 tbsp tomato paste

1 tsp chili powder

½ tsp cumin

½ tsp paprika

Salt and pepper to taste

½ cup water or broth

Toppings

1 avocado, sliced or mashed

¼ cup plain Greek Yogurt or sour cream

2 tbsp chopped cilantro

Lime wedges

Optional: shredded cheese

Instructions

1. Roast the Sweet Potatoes

Preheat oven to 200°C (400°F).

Pierce sweet potatoes with a fork and rub with olive oil, salt, and pepper.
Place on a baking tray and roast for 35–40 minutes until tender.

2. Make the Turkey Chili

Heat olive oil in a skillet over medium heat.
Add onion and saute 3–4 minutes until soft.

Add garlic and ground turkey. Cook until browned.

Stir in:

diced tomatoes

tomato paste

chili powder, cumin, paprika

salt and pepper

water or broth

Simmer for 10–15 minutes until thick and flavorful.

3. Prepare the Potatoes

Slice each roasted sweet potato open and fluff the inside slightly with a fork.

4. Assemble
