Salad
1 medium head of cauliflower, chopped into bite-sized florets
6 slices of bacon, cooked and crumbled
1 cup shredded cheddar cheese
½ cup chopped red onion
½ cup chopped celery (optional, for extra crunch)
¼ cup chopped green onions or chives
¼ cup sunflower seeds or sliced almonds (optional)
Dressing
½ cup mayonnaise
¼ cup sour cream (or Greek yogurt for a lighter option)
1 tablespoon apple cider vinegar (or white vinegar)
1 teaspoon Dijon mustard
1 teaspoon garlic powder
½ teaspoon salt (adjust to taste)
½ teaspoon black pepper
Instructions
Step 1: Cook the Bacon
Cook the bacon in a skillet over medium heat until crispy, about 6-8 minutes.
Transfer to a plate lined with paper towels to drain excess grease. Once cooled, crumble into small pieces.
Step 2: Prepare the Cauliflower
Bring a pot of water to a boil.
Add the cauliflower florets and blanch for 2-3 minutes until slightly tender but still firm.
Drain and immediately rinse under cold water to stop cooking. Let dry completely. (For a crunchier salad, skip blanching and use raw cauliflower.)
Step 3: Make the Dressing
In a large bowl, whisk together mayonnaise, sour cream, vinegar, Dijon mustard, garlic powder, salt, and black pepper until smooth.
Step 4: Assemble the Salad
Add the cooled cauliflower, bacon, cheddar cheese, red onion, celery (if using), and sunflower seeds or almonds to the bowl.
